I believe that's Masquarade armor, a crafted set that necros and elementalists can use too. Eona_Targaryen is right, armor skins in GW2 are based on armor class, not profession. If you actually want to know the "traditional" male mesmer aesthetic, you could look at the mesmer armor in GW1, where looks were separated by profession.
I started character creation with a Norn, went through customization, picked Bear for a pet, made it to name and after a few swings I backed all the way up to the racial selection menu, chose Sylvari, picked Fern Wolf for a pet, came up with a name and much to my surprise, started the game with the Bear.
